I saw this today, and now I want to try it!  Laughing  Anyone want to run to the store with me? Wink

No-Bake Chocolate Eclair Dessert 1


No-Bake Chocolate Eclair Dessert

Ingredients

   Filling:
   2 (3.5 oz.) boxes vanilla instant pudding
   3 c. milk
   1 (8 oz.) container Cool Whip
   Graham crackers
   Topping:
   1/3 c. cocoa
   1 c. sugar
   1/4 c. milk
   1 stick (1/2 c.) butter (or margarine)
   1 tsp. vanilla

Instructions

   For the filling:
   Combine pudding mix and milk; beat. Stir in Cool Whip.
   Place a layer of graham crackers in the bottom of a 9x13" dish. Spread 1/2 of the pudding mixture over the graham crackers. Repeat with another layer of graham crackers and pudding; then top with a final layer of graham crackers.
   For the topping:
   Bring cocoa, milk, and sugar to a full rolling boil; boil about 1 minute, stirring very frequently. Remove from heat and cool one minute. Add butter and vanilla; stir until butter is melted.
   Pour chocolate topping over the top layer of graham crackers.
   Refrigerate over night.

I made this tonight for tomorrow's church dinner. I'll let you all know how it turned out. It *looks* fabulous! But the proof is in the eating. Wink

Question:  do you crush the graham crackers, or just layer them in whole?

thud This is a SERIOUSLY delicious recipe! That chocolate sauce on top is just fantastic! I made a big pan of it and came home with two slices left - and there were a LOT of desserts...So that one is going on my "Make it again!!" list. yes The next time I may substitute half of the white sugar with brown sugar in the chocolate sauce, because I was telling Rob, it smells (and tastes!) like Mackinac Island fudge...The only difference is that there's brown sugar in the fudge - and of course the fudge is much thicker. But I think I'll give the chocolate sauce a whirl with brown sugar next time. I swoon just thinking about it. HeeHee
