I made these yesterday. Yum!

Apple Pie Cookies

Ingredients:

* 1/2 cup shortening
* 1 cup sugar
* 1 egg
* 1/2 cup milk
* 1 teaspoon vanilla extract
* 3-1/2 cups all-purpose flour
* 2 teaspoons cream of tartar
* 1 teaspoon baking soda
* 1 teaspoon salt
* FILLING:
* 1/2 cup packed brown sugar
* 2 teaspoons all-purpose flour
* 1/2 teaspoon ground cinnamon
* 3 medium tart apples, peeled and grated (about 2 cups)
* 3/4 cup water
* GLAZE:
* 4 tablespoons water
* Red and green liquid food coloring

Directions:
In a large bowl, cream shortening and sugar until light and fluffy. Beat in the egg, milk and vanilla. Combine flour, cream of tartar, baking soda and salt; gradually add to creamed mixture. Divide in dough in half. Refrigerate for 2-3 hours or until easy to handle (dough will be soft).
Meanwhile, in a small saucepan, combine the filling ingredients. Cook over medium heat until apples are softened and mixture is thickened; cool.
On a lightly floured surface roll out each portion of dough to 1/8-in. thickness. Cut with a floured 2-1/2-in. apple cookie cutter. Place 2 in. apart on ungreased baking sheets. Spread with 2 teaspoons of filling to within 1/4 in. of edge. Top with another cutout seal edges.
Bake at 375° for 10-12 minutes or until lightly browned. Remove to wire racks to cool completely. Meanwhile, in a small bowl, combine 3 tablespoons water and 18 drops red food coloring. In another small bowl, combine remaining water and 6 drops green food coloring. Using a pastry brush, "paint" apples red with green leaves. Yield: 2 dozen.

Dishpan Cookies

2 C light brown sugar
1 C white sugar
2 tsp vanilla
2 C Oil
4 eggs
4 C flour
2 tsp baking soda
1 tsp salt
1 ½ c quick oats
4 C cornflakes

(The ones I have had, have chocolate chips and nuts in them)

In a very large bowl or dishpan, cream sugars, vanilla, oil, and eggs. Add flour, soda, and salt. Fold in oats and cornflakes.
Drop by ¼ measuring cup onto ungreased cookie sheets. This batter might be a little dry and you may have to moosh it together with your hands to get it into a ball when you put it onto the pan.
Bake for ten to twelve minutes in a preheated oven, or until edges are lightly browned. If you want them to be chewy, bake a little less, crispy, a little more. I always double this recipe and do half chewy, half crunchy. They keep really well and are great for breakfast.
*This freezes well both as a dough and as a finished cookie.

The mixture makes up SO many cookies, you need a dishpan to mix them in.......... Huh?

I'm getting ready to make these.

Candy Corn Cookies

Ingredients

* 1-1/2 cups butter, softened
* 1-1/2 cups sugar
* 1/2 teaspoon vanilla extract
* 3 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* Yellow and orange paste food coloring

Directions

* In a large bowl, cream butter and sugar until light and fluffy. Beat in vanilla. Combine flour, baking soda and salt; gradually add to creamed mixture and mix well.
* Divide dough in half. Tint one portion yellow. Divide remaining dough into two-thirds and one-third portions. Color the larger portion orange; leave smaller portion white.
* Shape each portion of dough into two 8-in. logs. Flatten top and push sides in at a slight angle. Place orange logs on yellow logs; push the sides in at a slight angle. Top with white logs; form a rounded top. Wrap in plastic wrap. Chill for 4 hours or until firm.
* Unwrap and cut into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 10-12 minutes or until set. Remove to wire racks to cool. Yield: about 5 dozen.


You'll like these even if you don't like candy corn!

I'll try them! Sadly, I didn't taste any corn candy...They are not common in my country. Blue Oh, but WAIT! I've seen corn candies in our Chinatown. They were chinese, but I think they must taste quite similar to American ones. I think that I'll buy a bag of them next time I could go there. Smile
