Saw this on Reddit just now. "Made these for my friend's birthday: peanut butter cheesecake with Oreo bottoms, topped with Reese's Peanut Butter Cups."
Ingredients:
16 Oreo cookies
2 (8 ounce) packages cream cheese, softened
3/4 cup sugar
2 eggs
1/4 cup sour cream
3/4 cup creamy peanut butter
Toppings:
1/4 cup semisweet chocolate chips
spritz of Pam
chopped peanut butter cups (I used the mini cups)
Instructions:
Preheat oven to 275F degrees. Place paper liners in a cupcake tin. Place one Oreo in the bottom of each liner.
In a large bowl beat the cream cheese and sugar until fluffy. Add the eggs, sour cream, and peanut butter and beat until combined.
Scoop batter on top of each Oreo cookie, filling each tin 3/4 of the way.
Bake for 27 minutes or until set.
Cool in the pan to room temperature and then chill in the refrigerator for 1-2 hours. Decorate with chopped peanut butter cups.
Melt the chocolate chips and Pam in the microwave and stir until creamy. Drizzle mixture on top of cheesecakes. You can chill in the refrigerator to help the chocolate set.
