| Okay... let me start of by saying that this is the only way I knew of cooking scrambled eggs... it wasn't until recently that I saw it done differently! lol I don't know if this has to do with the way things were done in El Salvador but to cook scrambled eggs, this is what I would do: Get a pan, heat it up (duh) lol When it's hot, put olive oil on the pan, then a couple of slices of onion When the onion is well cooked, take the onion out, and then add the eggs and some salt. Scramble them in the pan as they cook until they become a good texture. Does this sound weird to you guys? lol I recently saw a video of a guy doing scrambled eggs with butter! I thought to myself... isn't he going to cook the onion? lol This guy put an egg in a bowl, scrambled it in the bowl. He put butter on the pan and when it was ready he put the egg in, added a little salt and even some milk/cream. It looked really good. How do you make your scrambled eggs? | |

| My mom used to always mix milk in her scrambled eggs and I always thought that was the only way to get them fluffy. Now after years of marriage, I've figured out that the key is to whip the eggs up very well (no milk) before they ever hit the pan. I use a very small amount of real butter (real works better than margarine)...not even a teaspoon to two eggs. I used to use olive oil, which I use for absolutely everything, but it's harder to get the eggs fluffy. Also, I learned that a small amount of club soda helps to fluff up an omelet. My guess is it would work similarly with scrambled eggs. “Not all of us can do great things. But we can do small things with great love.”

Aha! No wonder mine never come out right. My way's pretty simple. I break two eggs in a bowl, add a bit of milk, and scramble them with a fork. Then I put the mixture in a skillet that's been dosed with only a little spritz of cooking spray. I cook 'em while shoving 'em around with a spatula till the texture is right, salt to taste, and then serve with a touch of ketchup. My sister likes to add grated cheese while the eggs are cooking. That's very good, too. I might try it with the onion slices, Carol. That sounds tasty. | |

| Interesting... I will try them that way. There are also several dishes that we use with egg. Have you guys tried any of these: Chorizo mixed with eggs Use oil to cook, slice onion...fry them, take them out... add about 1/4 lb of mexican chorizo sausage, cook well and then add eggs, scrambled until done. Here is a pic showing what a plate would basically look like: Bean, tortilla, cheese, guacamole and the Chorizo w/ Egg. Rice mixed with eggs To do this, again you use the onion, heat it up, take it out... add oil and rice. You heat the rice up (white or brown) and when it is ready, add 2 eggs into the rice and scramble. Plate looks like this: You can add some sauce on top, serve with tortilla and enjoy! Tomatoes mixed with eggs To do, you slice the onions, heat... take out. Then add several slices of tomato to the pan. Cook... then add the eggs Here are 2 pictures. One shows a lot of tomatoes added and one used less tomatoes: This plate is so good, served with some cheese and avocado and tortilla. A cup of coffee... a grand breakfast! | |

| I usually use cooking spray, but butter or oil could be used. I prefer the eggs without milk, but my husband always adds it when he makes them.
Carol, what do you do with the onion after the eggs are done? You didn't say if you add it to the scrambled eggs or eat it on the side. | |

| I always mix the eggs with milk. Sometimes in a bowl, before putting them in the pan, and sometimes, if I'm in a hurry, I mix the eggs and milk right in the skillet as I'm cooking. I always use melted butter or margarine and add salt and pepper to them. We like to mix in ham and shredded cheese. | |

| I make my scrambled eggs (and my omelettes) sort of the way that you saw the guy make them on the video. I don't think I've ever cooked eggs with onions! | |
