| Farmers Brownies Ingredients:1/2 cup cocoa 1 cup hot water 3/4 cup butter 2 1/2 cups flour 2 cups sugar 1/2 tsp salt 1 tsp baking soda 2 eggs beaten 1/2 cup buttermilk 1 tsp vanilla 1 cup chopped nuts 1. Mix cocoa in hot water, stir in butter and allow to cool 2. Whisk together dry ingredients, stir in cocoa mixture and eggs 3. Beat in buttermilk, vanilla and nuts 4. Spread in large cookie sheet.. approx 13x17" 5. Bake for 20 min at 375º Topping ingredients:454 g bag of miniature marshmallows 1 1/2 cups chocolate chips 1 cup peanut butter 3 cups rice krispies 1. When cake is done spread the marshmallows over the top and put cake back in the oven till the marshmallows melt. Set aside to cool completely. 2. Melt chocolate chips and peanut butter in microwave for 1 min, stir in rice krispies and spread over cooled cake. Chill in fridge to set the topping. | Rob, those strawberry snowmen are so clever! Jessica---YUM. Blueberry muffins. Rhonda, who would think of using a crock pot for a dessert like that?? Looks good! I'll bet that butter pecan fudge is heavenly, Lisa! I thought I'd share my Christmas Wreath cookie recipe. Maybe I've shared it before, but I can't remember. I don't have a picture, sorry....this one does not come out looking like a wreath, unless you are going to painstakingly shape them as such. But no one cares because they're so tasty. And they're green, so still festive. This is scientific, seriously. This MUST be exact. I've had family members say they've tried this and mine are better. But if they do this exactly according to recipe and recommended ingredients, they should turn out just like mine. Also, the key is to have all your ingredients totally prepared....you have to work fast with this one! And make sure you have wax paper out already---your fingers will get sticky! *Melt one stick REAL (unsalted or salted, doesn't matter) BUTTER. When it comes to baking, use real butter, not margarine. Your guests will thank you. You will need a larger sauce pan for this recipe....you need a lot of space to stir. *Melt exactly 32 large marshmallows (any brand will do, but don't buy the UNbranded, if you know what I mean. Store brand is fine). Stir these constantly over medium heat---do not let burn. *Remove from heat and stir in 1 teaspoon vanilla extract and 1/2-3/4 tsp green food coloring, depending on how green you want these. I like the darker green. *Quickly add exactly 4 1/2 cups frosted flakes and stir like a madwoman (or man. ). This is more of a folding technique, but the marshmallow mixture will set up quickly so you have to really be ready with those flakes and make sure they all get coated well. Also, you can use store brand with these too...I can't tell any difference between that and Kelloggs in this recipe. *Drop spoonfuls of mixture onto wax paper. Mine are about an inch and a half in diameter, I think. You can add a few cinnamon red hots to each one if you'd like, to look like berries on a wreath. Very pretty! These are my boys' favorite cookies and it wouldn't be Christmas in our house without them! They are also what all my family expect me to bring for gatherings. | It's been a long time since I've had one of those, Amy. I don't think I have ever had them made with frosted flakes though, just plain corn flakes. I'm sure the extra sugar makes them extra good. | |

| Snickers Brownie Bites 1 box brownie mix, plus ingredients on back of box 1 jar marshmallow fluff 1 cup smooth peanut butter 1 pkg Kraft caramels, unwrapped 1 Tbsp heavy cream 1 & 1/4 cup dry roasted peanuts 1/2 pkg chocolate Candiquik or milk chocolate almond bark 1. Preheat your oven to 350 degrees F. Line a 13×9″ baking pan with foil and spray lightly with cooking spray. Prepare your brownie mix according to package directions and pour into the prepared pan. Bake until a toothpick inserted in the center comes out clean per the directions on the package. Cool the brownies completely. 2. In a medium bowl, combine the marshmallow fluff + the smooth peanut butter with a rubber spatula or hand mixer until blended. Spread the fluff mixture on top of the cooled brownies in an even layer. 3. Microwave the unwrapped caramels in a medium bowl with a splash of heavy cream for 1 minute. Stir, then heat for an additional 30 seconds or until melted and smooth. Spread the caramel layer on top of the fluff nougat layer evenly. Immediately sprinkle on the peanuts and press them gently into the caramel. Pop the brownies in the fridge for about 30 minutes to set. 4. Melt the Candiquik according to package directions until smooth. Using a sharp knife sprayed with cooking spray, cut the brownies into 1″-2″ sized squares. Dip the tops of the squares in the melted chocolate, allowing excess to drip off. Place on a foil-lined baking sheet to set. Repeat until all the bites have been coated. 5. | German Chocolate Brownies
Brownies: 2 sticks of butter 2 1/4 cups of sugar 4 large eggs 1 tablespoon vanilla 1 1/4 cups of cocoa powder (I used dark cocoa powder this time) 1/2 teaspoon salt 1 teaspoon baking powder 1 1/2 cups all-purpose flour 2 cups chocolate chips
Grease a 9x13 in. pan. and preheat the oven to 350º. Mix together the butter and sugar in a microwave safe bowl. Heat in the microwave, stirring about every 30 seconds, until the mixture is bubbly and smooth (you can also do it on the stove top if you want). Add in the eggs and vanilla and beat until smooth. Mix together the cocoa powder, salt, baking powder, and flour and add to the butter mixture, mixing until smooth. Stir in the chocolate chips. Pour the batter into the pan. Bake for about 28 minutes.
Coconut Pecan Frosting: Adapted from Joy of Baking 1 cup sugar 1 cup evaporated milk 3 egg yolks 1/2 cup butter 1 teaspoon vanilla 2 1/2 cups coconut 1 1/2 cups pecans, roughly broken or chopped
Lightly toast the pecans in a large pan on the stove. In a pot, beat together the sugar, milk, yolks, and butter. Cook, stirring constantly just until it begins to bubble and thicken. Remove from heat. Add vanilla, coconut, and chopped pecans.
Chocolate Frosting (optional): 1/2 cup butter, softened 1/3 cocoa powder 2 cups powdered sugar 1/4 cup heavy cream (or milk if you're boring) 1 teaspoon vanilla (more whole toasted pecans for decorating)
Beat the butter and cocoa together, alternately add the cream and sugar, beginning and ending with the cream. Add more cream or powdered sugar if necessary for consistency. Mix in the vanilla.
Assembly: You don't have to bother with letting the frosting or the brownies cool completely before frosting them. Just dumped it on and threw them in the fridge. The frosting with harden and is cools. Keep them in there overnight, but that's not necessarily necessary. In the morning, lift the entire thing out of the pan with a spatula (it's a pretty sturdy old block of chocolate. Just make sure you run a knife around the edge first). Then cut them with a big knife on a cutting board. Don't worry though, you can cut them like normal brownies if you want. Pipe a little chocolate frosting on each one and top it with a pecan if you want. CANCER FREE!!! April 9, 1998-April 9, 2025-I AM A SURVIVOR!!! | |
