Here is a Swedish meatball recipe I have used for years. You may use store bought frozen meatballs but these are good too.
INGREDIENTS:
1 1/2 pounds lean ground beef
1/4 pound Jimmy Dean sausage (or favorite ground sausage)
1 egg
1/4 cup ketchup
2 tablespoons Worcestershire sauce
1 tablespoon dry mustard
1 tablespoon soy sauce
1 clove minced garlic
2 teaspoons salt
1 teaspoon pepper
.
Sauce:
2 cans Cream of Mushroom soup
1 cup sour cream
1 teaspoon Worcestershire sauce
1 dash Tabasco sauce
1/4 cup milk
PREPARATION:
Mix all ingredients together for the meat mixture. DO NOT OVER MIX! Roll into small balls and place on cookie sheet. Bake 45 minutes or until browned. In a medium bowl mix sauce ingredients together. Place meatballs in a skillet or crock pot.

Here is another Argentinian classical recipe:


Cazuela Salteña (Stew from Salta's Privince)


-1/2 hen or chicken
-1 big onion (chopped)
-1/2 cup of maize or all purpose oil
(not olive oil)
-1/2 cup of rice
-6 potatoes
-6 eggs
-salt and pepper to taste
-Boiling water as for six plates of soup.

Cook the onion in the oil until slightly golden (not brown). Then , add the hen, cut into pieces. Add salt and pepper and cover the saucepan.

When the hen is starting to "pour off" her juice, add the boiling water and bring to a boil. Allow it to boy slowly. 30 minutes before you'll retire the saucepan from heat, add the potatoes , and 15 minutes later, add the rice.

When the stew is done, you'll add the eggs, one by one in different places to allow them to cook whole. You must break every egg over the stew, and not put them keeping their eggshells! grinsmiley

Serve it pouring in every plate, a piece of hen, a whole potatoe and an egg. Then, pour a lot of the stock.

Serve with white dry wine.

P.S: I also likes pineapple a lot, Savannah. But I must also say that I like fruit in general: cherries, plums, grapes and all kind of berries are my very favorites.

A few of my favorite recipes:

CHICKEN CACCIATORE

Ingredients:

1 tbsp. butter
1/2 lb. skinned, boned chicken breast halves
1/2 c. onion, chopped
1/2 c. celery, chopped
1 clove garlic, minced
1 (26 oz.) can whole tomatoes, undrained & chopped
1 c. sliced, fresh mushrooms
1/2 c. fresh parsley, chopped
1/4 c. green pepper, chopped
1 tsp. dried whole basil
1 tsp. dried whole oregano
1/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. red pepper

Directions:

Melt butter over low heat in a large skillet; add chicken and cook until lightly browned. Chop chicken, and set aside. Add onion, celery and garlic to butter to skillet; saute until vegetables are tender. Return chicken to skillet with tomatoes and remaining ingredients. Cover and simmer 20 minutes.

PIGNOLI COOKIES (these are delicious - but the ingredients are a little expensive. I'm working on finding a substitute for almost paste and this past year, I used almonds on some cookies instead of pine nuts)

INGREDIENTS:
12 ounces almond paste
1/2 cup white sugar
1 cup confectioners' sugar
4 egg whites
1 1/2 cups pine nuts

DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C). Line 2 cookie sheets with foil; lightly grease foil. Mix almond paste and granulated sugar in food processor until smooth. Add confectioners' sugar and 2 egg whites; process until smooth.

Whisk remaining 2 egg whites in small bowl. Place pine nuts on shallow plate. With lightly floured hands roll dough into 1 inch balls. Coat balls in egg whites, shaking off excess, then roll in pine nuts, pressing lightly to stick. Arrange balls on cookie sheets, and flatten slightly to form a 1 1/2 inch round.

Bake 15 to 18 minutes in the preheated oven, or until lightly browned. Let stand on cookie sheet 1 minute. Transfer to wire rack to cool

Chicken Tortilla Soup

INGREDIENTS:

2 1/2 teaspoons vegetable oil
6 (6 inch) corn tortillas, cut into 1/2 inch strips
3 cups chicken broth
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon dried oregano
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can whole kernel corn, drained
2 skinless, boneless chicken breast halves, cut into bite size pieces
1/2 cup salsa
1/2 cup chopped fresh cilantro

DIRECTIONS:
Heat 2 teaspoons of the oil in a large pot over medium heat. Add half of the tortilla strips, stirring often, until crisp. Drain on paper towels. Repeat with remaining 1/2 teaspoon of oil and remaining tortilla strips and set aside.

Add the broth, cumin, chili powder and oregano to the pot. Raise heat to high and bring to a boil. Add the beans, corn, chicken and salsa. Reduce heat to low, stir and simmer for about 2 minutes, or until chicken is cooked through and no longer pink inside.
Add the cilantro and half of the reserved tortilla strips. Ladle into individual bowls and garnish each bowl with some of the remaining strips.

* I usually don't cook the tortilla strips in the soup anymore - the first time I did, but they got soggy and took away the broth from the soup. It's a delicious soup if you like things a little spicy - I love this recipe! Thumbsup

1 Cup of Cracker Crumbs or Bread Crumbs
2/3 Cup Onions
3 Teaspoon Salt
1/2 Teaspoon Ginger
1/2 Cup Milk
Mix Together and Make Meat Balls then Fry them till they are Brown

Sauce
1 Cup Sugar
2/3 Cup Viniger
2 cup Tomatoes Juice
2 Teaspoon Soya Sauce
2/3 Cup Peppers
Boil it till the Peppers are Done put Corn Starch in the sauce till it thickens and Pour over the Meat Balls and Bake all together till there are Done

I love sweet and sour meatballs.......I put big chunks of bell peppers and the bite size pieces of pineapple in mine......pour the juice in for added sweetness..........YUM! grinsmiley

I Found This Recipe on the Internet and it is a Very Good one at that It's a Corn Dog Recipe Oh once you have Mix evreything the Dough will Probally Be to Thick to Dip the Hotdogs in so just add more milk till it's thin enough to Dip them grinsmiley


Corn Dogs Recipe
Ingredients:
1 cup all-purpose flour
1 cup yellow cornmeal
3 teaspoons baking powder
1 teaspoon salt
1 1/2 teaspoons chili powder
2 eggs
1 cup milk
1/4 cup vegetable oil
oil or shortening for deep frying
1 pound hot dogs, about 10, or use 1 pound of cocktail hot dogs
wooden skewers, popsicle sticks, or toothpicks for cocktail hot dogs
Preparation:
In a mixing bowl, combine flour, cornmeal, baking powder, salt and chili powder. In another bowl, beat the eggs with milk and the 1/4 cup of oil. Stir egg and milk mixture into dry ingredients and whisk together until batter is smooth. Heat oil in the deep fryer to 360°. Insert a wooden skewer or popsicle stick into each hot dog, to make a "handle" for the hot dogs. Holding the stick or skewer, dip each hot dog into batter, turning to coat thoroughly and evenly. Fry corn dogs in 2 or 3 batches, for about 3 to 5 minutes, or until golden brown. Drain on paper towels or heavy brown paper.

Ok Here is the Enchiladas Recipe



Enchiladas

The Meat
1 kg Ground Beef
2 Jalapenos
1 Onion
2 Tapel Spoon Red Knorr Soup Powder
1 Table Spoon Salt
Garlic Salt (As Much as you Want to)
2 Cups Water


The Sauce
1/2 Cut Onion
2 Table Spoon Oil
1 Table Spoon Flour
2 Table Spoon Chili Powder
1/4 Teaspoon Ground Cumin
1/4 Teaspoon Oregano
1 Teaspoon Salt
2 Teaspoon Sugar
2 Cups Tomato Juice

Fry the Corn Tortillas put the meat in there Roll them together and pour the sauce over them Put Cheese over them bake till cheese is melted
Also Works with Flour Tortillas Enjoy Smile

Here's a recipe for breaded pork chops. They are SO good! Tender....not the least bit dry, and super easy:


BREADED PORK CHOPS


Ingredients

  • 2 tablespoons cornmeal
  • 2 tablespoons whole wheat flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon sage
  • 1/2 teaspoon sugar
  • 1/2 teaspoon paprika
  • 1/4 teaspoon onion powder
  • 4 pork chops (1/2 to 3/4 inch thick)
  • 1/4 cup milk

Directions


  • In a shallow bowl or large resealable plastic bag, combine the first seven ingredients. Dip pork chops into milk, then into the cornmeal mixture. Place on a rack in a shallow baking pan. Bake, uncovered, at 425° for 30-35 minutes or until juices run clear. Yield: 4 servings.

I have started to like French Cooking this is what i tried today

Julia Child's Bruschetta

Cut fresh tomatoes into chunks, tear a few basil leaves into medium-small pieces, place in a bowl and toss with olive oil. Let marinate for a while. (I didn't put Olive oil in the tomatoes i don't like greasy food)
Season with salt and pepper about a half hour before serving. The salt makes the tomatoes release their juices and you don’t want that happening too soon.
Buy a rustic baguette. fry the bread in olive oil try to get it crunchy on the outside while retaining some softness in the center.
Rub the bread with a whole garlic clove (the garlic will disintegrate into the bread since the coarse bread will act like a grater) Sprinkle with kosher salt and freshly ground pepper.
Top bread with tomato mixture. If the bread is really crunchy, let the tomatoes sit for a few minutes before serving to soften the bread Sprinkle Cheese on top if you like Smile

CHICKEN TORTILLA CASSEROLE
DIFFICULTY: EASY • PREP TIME: 0:10 • COOK TIME: 0:25 • SERVINGS: 4

INGREDIENTS:
2 boneless, skinless chicken breasts
2 tablespoons vegetable oil
½ small red onion, minced
2 garlic cloves, minced
1-2 tablepoons minced chipotle peppers in adobo sauce
2 cups chicken broth
5 cups (1 regular sized bag) tortilla chips, crushed
1 tomato, cored, seeded, and chopped
1 cup Mozzarella cheese, shredded
2 Tablespoons chopped fresh cilantro

PREPARATION:
Pat the chicken dry and season with salt and pepper. Heat 1 tablespoon of oil in a large oven safe skillet over medium-high heat until smoking. Add the chicken and cook on both sides until golden brown, cooked through and juices run clear (reading 160 on a thermometer). I like to pound the chicken with a meat mallet before putting it in the pan to help it cook through faster.

Transfer chicken to a plate and set aside. When cool enough to handle, shred or chop into bite-sized pieces.

Add the remaining oil, onion, garlic, chipotle, and ¼ teaspoon of salt, and cook until fragrant, about 30 seconds. Add broth and scrape off the browned bits, then bring to a simmer.

Stir in half the tortilla chips and let disolve into the broth, about 5-8 minutes. Return chicken to the skillet and add the tomato, ½ cup of cheese and 1 tablespoon cilantro. Stir in the other half of the tortilla chips until they are incorporated and moistened.

Preheat broiler and adjust the oven rack to about 6 inches beneath the heating source.

Sprinkle the remaining cheese on top and broil until the cheese is melted and browned, 2-3 minutes. Top with remaining cilantro and serve.

I find the chipotle pepper quite spicy, so start out with one tablespoon if you don’t love spicy food. I usually add just one tablespoon of the pepper and then 1 tablespoon adobo sauce, I like the smokiness it adds.

Note: To reheat leftovers I line the skillet with aluminum foil (for easy clean-up) and warm on stove top.

Oh my gosh, I am SO making that. Thanks for posting it!! My son and hubby will love this.

Here's a 'cast iron skillet' recipe that we LOVE and I make probably once a month or so. Super simple, all in ONE pan (ALL of it---not one bowl gets used), and it is positively FABULOUS!!

Main Dishes Mini-pepper-chicken-nachos

Ingredients
•1 teaspoon vegetable oil
•2 cloves garlic, minced
•6 green onions, sliced, white parts and green parts separated
•1 1/2 cups shredded cooked chicken
•1 teaspoon chili powder
•1 cup salsa
•salt and pepper to taste
•1 pound mini bell peppers (these are usually sold by the bag in the produce section near the full-sized bell peppers)
•1 1/2 cups shredded cheddar/Monterey jack cheese blend (can be low-fat)
•1/4 cup sliced black olives
•1/2 large tomato, diced
•1/4 cup cilantro

Instructions
1.Heat oven to 350 degrees.
2.Heat the oil in a 12 inch non-stick skillet over medium heat. Add garlic and the white parts of the green onions and cook and stir 1 minute. Mix in shredded chicken and chili powder. Toss until all ingredients are well coated with chili powder and chicken is warm, about 1-2 minutes. Remove from heat and stir in salsa. Season to taste with salt and pepper. (I make the chicken mixture slightly salty because the mini peppers are unsalted.)
3.Slice the ends off each mini bell pepper and slice in half lengthwise. Remove seeds and ribs and press each half open so the peppers are as flat as possible. Arrange close together in a single layer on a large baking sheet.
4.Spoon chicken mixture evenly over pepper halves. Top with black olives and cheese mixture.
5.Bake nachos for 10 minutes, or until cheese has melted. Remove from oven, top with tomatoes, cilantro, and remaining green onions. Serve.

Yield: 4 side dish servings
Prep Time: 10 min
Cook time: 10 min

Found this one online just had to share it

Dorito crusted chicken

Ingredients
4 boneless skinless chicken breasts
1 large bag of Doritos, nacho flavor (or flavor of choice)
2 cups buttermilk
2 cups flour
4 eggs
cooking spray, optional


Instructions:
Cut the chicken into thin ½ inch strips.Place the chicken in a bowl and pour in the buttermilk. Stir so the chicken is coated in the buttermilk. Cover the bowl and place in the fridge for about 2 hours.Using a food processor, crush the Doritos so that they are a texture similar to panko or coarse bread crumbs. Set aside in a large bowl.Place flour in one bowl and eggs in another. Whisk the eggs so that they are well scrambled.Preheat oven to 400F and spray a baking sheet with cooking spray.Set up the four bowls in order: 1. bowl with the chicken, 2. bowl with the flour, 3. bowl with the beaten eggs, 4. bowl with the crushed Doritos.Using a fork, lift out a few chicken strips and let excess buttermilk drain off. Place them in the flour and dredge them in so they are all coated in flour. Lift the chicken strips out of the flour and shake off any excess. Place them in the egg wash and turn them so they are evenly coated in egg. Lift them out of the egg and then dredge in the crushed Doritos. Place the coated chicken fingers on the baking sheet. Do this with the remaining chicken strips.Bake in the oven for 15-20 minutes, turning halfway through.Serve with buttermilk ranch dip, bbq sauce or your favorite dip.
