Here is another Great Mexican Recipe Smile

Mexican Potato Casserole

4 medium potatoes, with peel
2 Tablespoons butter
2 1/2 Tablespoons taco seasoning
1/2 pound lean ground beef
1/4 cup chopped onion
1 cups salsa
1/2 cup chopped peppers (red, green or yellow)
1 cup grated Monterey Jack cheese

Cut potatoes into bite-size pieces and place in greased casserole dish.
Melt butter...stir in taco seasoning.
Pour over the potatoes and stir to coat well.
Bake uncovered at 425 degrees Fahrenheit for 40 minutes.
Stir...bake 10 minutes longer.
Brown and crumble beef; add onion and cook until soft...then drain.
Stir in salsa and chopped peppers.
Pour over potatoes.
Top with grated cheese.
Bake uncovered for 10 minutes.
Serve with additional salsa and/or sour cream.

Hey, Jacob. I'm a big burger fan. Here's a recipe I found not long ago. I haven't tried it, but it sounds good:

BLUE CHEESE BURGERS

1 lb. ground beef

1 tbsp. Worcestershire sauce

1 tsp. black pepper

About 2 oz. crumbled blue cheese

1 medium red onion, sliced crosswise

Olive oil

1 cup fresh baby spinach

4 hamburger buns

In a bowl, combine ground beef, Worcestershire sauce and black pepper. Shape into eight thin 4-inch patties. Place one tablespoon of blue cheese into the center of four patties. Top with remaining four patties and pinch edges to seal.

Brush onions with olive oil, sprinkle with salt.

Place burgers and onions directly over medium-high heat. Grill five minutes per side or until meat is no longer pink.

Brush cut sides of buns with olive oil. Grill buns, cut side down, for the last minute that the burgers are grilling. Serve burgers on buns with grilled onions, spinach and remaining cheese.

Georgia Peach Homemade Ice Cream

Ingredients

2 1/2 pounds fresh peaches - peeled, pitted and chopped
1/2 cup white sugar
1 pint half-and-half cream
1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
1 teaspoon vanilla extract
2 cups whole milk, or as needed

Directions

Puree peaches with the sugar and half-and-half in batches in a blender or food processor.
In a gallon ice cream freezer container, mix together the peach mixture, sweetened condensed milk, evaporated milk, and vanilla. Pour in enough whole milk to fill the container to the fill line, about 2 cups.
Follow the manufacturer's instructions to freeze the ice cream.
