Sweet Potato Muffins

6 tablespoons butter, softened
2/3 cup sugar
1 egg
1 teaspoon vanilla extract
1 3/4 cup sifted all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
2/3 cup evaporated or regular milk
1 1/2 cups peeled finely shredded sweet potato
2/3 cup chopped walnuts or pecans

In a large mixing bowl with hand-held electric mixer on medium speed, beat butter and sugar until light and fluffy. Beat in egg and vanilla until well blended.

In a separate bowl, combine flour, baking powder, cinnamon, nutmeg, and salt. Stir into the butter mixture alternately with milk, mixing just until dry ingredients are moistened. Stir in sweet potato and chopped nuts. Spoon batter into greased muffin cups, filling about 2/3 full. Bake at 375° for 25 to 30 minutes, or until centers spring back when pressed with fingertip. Cool in pan on rack for 5 minutes. Makes about 1 dozen sweet potato muffins.

Deep Dish Taco Pizza

1 lb ground beef (lean is good but not required)
1/2 cup frozen chopped onion
1 (15oz) can diced tomatoes with green chilies, drained
1 tsp Mexican Seasoning
1 can refrigerated pizza crust dough.
Cooking Spray
1 cup shredded reduced fat cheddar or reduced fat mexican cheese blend (my preference)

Preaheat oven to 425.

Cook beef and onion in a large nonstick skillet over medium-high heat until beef is browned, stirring to crumble. Drain well, and return beef mixture to pan. Stir in tomatoes and seasoning; cook over medium-high heat 1 minute or until throughly heated; set aside.

Unroll pizza crust dough. Spray 13x9 baking pan with cooking spray. Press dough into bottom and halfway up dish. Spoon beef mixture over dough.

Bake at 425 for 12 minutes. Top with cheese and bake 5 minutes or until crust is browned. Let stand 5 minutes before slicing. Serve warm with salsa and sour cream if desired. Yield 6 servings.

Midwest Farmer's Daughter Fresh Peach Pie

5 Cups sliced fresh peaches
3/4 cup sugar
2 tablespoons tapioca
1 tablespoon lemon juice
1/8 teaspoon cinnamon
A few grains of salt
1 tablespoon butter, cut into bits
1 teaspoon sugar
Pastry for two crust, 9 inch pie

Mix first seven ingredients. Line 9 inch pie pan with pastry. Pour in peach mixture. Cover with top crust. Seal, flute, BLEEP with fork. Brush lightly with cold water. Sprinkle with one teaspoon sugar. Bake on lowest rack in oven at 400 degrees for 40-50 minutes

Patti Labelle's Over the Rainbow Macaroni and Cheese,

Makes 4 to 6 servings

1 tablespoon vegetable oil
1 pound elbow macaroni
8 tablespoons (1 stick) plus 1 tablespoon butter
1/2 cup (2 ounces) shredded Muenster cheese
1/2 cup (2 ounces) shredded mild Cheddar cheese
1/2 cup (2 ounces) shredded sharp Cheddar cheese
1/2 cup (2 ounces) shredded Monterey Jack
2 cups half-and-half
1 cup (8 ounces) Velveeta, cut into small cubes
2 large eggs, lightly beaten
1/4 teaspoon seasoned salt
1/8 teaspoon freshly ground black pepper

Preheat the oven to 350? F. Lightly butter a deep 2 1/2-quart casserole.

Bring the large pot of salted water to a boil over high heat. Add the oil, then the elbow macaroni, and cook until the macaroni is just tender, about 7 minutes. Do not overcook. Drain well. Return to the cooking pot.

In a small saucepan, melt eight tablespoons of the butter. Stir into the macaroni. In a large bowl, mix the Muenster, mild and sharp Cheddar, and Monterey Jack cheeses. To the macaroni, add the half-and-half, 1 1/2 cups of the shredded cheese, the cubed Velveeta, and the eggs. Season with salt and pepper. Transfer to the buttered casserole. Sprinkle with the remaining 1/2-cup of shredded cheese and dot with the remaining one tablespoon of butter.

Bake until it's bubbling around the edges, about 35 minutes. Serve hot.

1 lb. ground beef
1 pkg. (1-1/4 oz.) TACO BELL HOME ORIGINALS Taco Seasoning Mix
12 TACO BELL HOME ORIGINALS Taco Shells
3/4 cup TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa
3/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 can (2-1/4 oz.) sliced pitted ripe olives

MIX meat and seasoning mix. Shape into 36 (1-inch) balls; place in 15x10x1-inch baking pan.
BAKE at 350°F for 15 to 20 minutes or until cooked through. Fill each taco shell with 1 meatball; drizzle with salsa. Top with 2 meatballs dipped in sour cream. Garnish with olives to make "eyeballs."

1 cup KRAFT Ranch Dressing
2 cups assorted cut-up fresh vegetables, such as bell pepper strips, cucumber slices, snow peas, mushroom slices, celery sticks, carrot sticks, cherry tomatoes, broccoli florets, cauliflower florets

LINE small bowl with lettuce leaves; fill with dressing. Place near one end of a large serving platter.
ARRANGE vegetables in a skeleton shape on platter, using the bowl as the head of the skeleton.

Trick-or-Treat Banana Pops

12 wooden pop sticks
1 pkg. (8 squares) BAKER'S Semi-Sweet Baking Chocolate
1/3 cup butter or margarine
3 Tbsp. multi-colored sprinkles

CUT bananas in half crosswise. Insert pop stick into cut end of each banana half. Place on tray; cover. Freeze 3 hours or until firm.
MICROWAVE chocolate and butter in small microwavable bowl on HIGH 1-1/2 to 2 minutes or until chocolate is almost melted, stirring after 1 minute. Stir until chocolate is completely melted. Pour into tall glass.
DIP frozen bananas into chocolate mixture, turning to evenly coat. Immediately roll in sprinkles. Place on wax paper-covered tray. Serve immediately. Cover leftover pops and store in freezer.

6 cups POST ALPHA-BITS Wholesome Sweetened Oat & Corn Cereal
4 cups popped popcorn
2 cups JET-PUFFED Miniature Marshmallows
1 cup dried mixed fruit
1 cup candy-coated chocolate pieces
100 candy corn pieces (about 1 cup)
10 clear large plastic food handlers' gloves
10 pieces raffia, each about 8 inches long

TOSS cereal with popcorn, marshmallows, dried fruit and chocolate candies in large bowl or toy witch's cauldron.
PLACE 1-1/4 cups of the snack mix in each of 10 small plastic bags. Give one to each child along with 10 pieces of candy corn, a plastic glove and piece of raffia. Have each child place 2 pieces of candy corn, with the white tips down, in each thumb and finger section of the plastic glove to resemble fingernails.
FILL gloves evenly with snack mix; tie closed with raffia.

Here mi recipe. This is from North Argentina and it's very easy to make. It's a traditional beverage.



ALOJA DE ANANÁ (Pineapple "Aloja")

-1 whole pineapple
- Three L (three big bottles) of water.
-6 spoonful of sugar.

Cut the pineaple rind and just eat the pulp the way you likes the most, but leave some of it (very little) glued to the rind. Cut the rind in pieces and put them in a glass jar, where you can pour at least three liters of water. Pour in the water and the sugar and cover the whole with a piece of cloth to allow the liquid "to breath". Allow it to ferment 4 or 5 days...and just simply drink it! It's very close to the champagne and must cheaper grinsmiley . If you wants something different, just add some lemon juice drops to it, or/and some gin.

I stumbled across this recipe. It sounds really good. Has anyone else tried it?

RECIPE: FROZEN WATERMELON


INGREDIENTS:
3 pints vanilla ice cream, slightly softened
3 pints raspberry sherbet, softened
1/2 cup (3 ounces) miniature semisweet chocolate chips
14 drops green food color
2 cups frozen whipped topping, thawed

DIRECTIONS:
Line an 8-cup mold or mixing bowl completely with aluminum
foil. Working quickly, spread the vanilla ice cream 1 inch
thick over the bottom and sides of the bowl. (It'll probably
slide down the sides a bit.) Immediately place in the freezer
and freeze for about 1 hour. When the ice cream has become
somewhat hard, but not frozen solid, spread it all the way
up the sides to the top of the bowl; then replace it in the
freezer for about 1 hour, until firm. Place the raspberry
sherbet in a medium-sized bowl and add the chocolate chips;
blend until evenly mixed. Place in the vanilla ice cream-
lined bowl. Cover with plastic wrap and freeze overnight,
or until completely hard. When ready to serve, in a small
bowl, mix the green food color with the whipped topping until
evenly blended. Remove the mold from the freezer, remove the
plastic wrap, and invert onto a platter larger than the mold.
Remove the mold and peel off the foil. Spread the whipped
topping evenly over the ice cream and serve immediately, or
freeze until the topping is firm, then cover and keep frozen
until ready to serve. Cut into wedges, just like fresh
watermelon.

Yield: 10-12 Servings

Apple Juice
11/2 Icecream Pail of Cut up Apples
for 2 Pails of Boiling Water let stand
over night for about 24 Hours then drain
Juice Use 10 Cup of Juice for 1 cup of
Sugar Boil for 10 Min
This makes Great apple Juice Better then store Bought Thumbsup

Oreo Cookies
2 Boxes of Choclate Cake mix
4 Eggs
1 Cup Oil

Stir everything together Roll balls of the Dough press them down a bit and Bake for 9 min then once they are bake then stick them together with Dream Whip

Sweet and Sour Meatballs
3 Pounds of Meat
1 Cup of Cracker Crumbs or Bread Crumbs
2/3 Cup Onions
3 Teaspoon Salt
1/2 Teaspoon Ginger
1/2 Cup Milk
Mix Together and Make Meat Balls then Fry them till they are Brown

Sauce
1 Cup Sugar
2/3 Cup Viniger
2 cup Tomatoes Juice
2 Teaspoon Soya Sauce
2/3 Cup Peppers
Boil it till the Peppers are Done put Corn Starch in the sauce till it thickens and Pour over the Meat Balls and Bake all together till there are Done

Banana Muffins
3 Big Bananas
3/4 Cup Sugar
1 Egg
1 1/2 Cup Flour
1 Teaspoon Backing soda
1 Teaspoon Backing Powder
1/2 Teaspoon Salt
1/3 Cup Melted Butter

Bake at 375 for 20 min
