I meant to post this before New Years but who says you can't make them any time of the year? This is a traditional Mennonite recipe these are always made for New years.
The trick is to make sure that the oil is the right temperature, so it is good if you can use an electric pan or fryer where you can set it. This recipe makes 3 dozen.
Ingredients:
1/2 cup milk
1 cup hot water
1/2 Tbsp salt
1 Tbsp sugar
1/2 tsp baking soda
1 1/2 cups raisins
1/2 cup prunes cut into small pieces
3 egg yolks
3 egg whites, beaten stiff
3 cups flour
1 1/2 Tbsp instant yeast
2 tsp baking powder
1 litre Canola oil (approx) for frying
Method:
Rinse raisins with boiling water to plump
In a large mixing bowl, combine milk, water, salt, sugar, soda, raisins and prunes.
Combine flour, baking powder and yeast, adding some to the liquids.
Stir egg yolks into batter and then add the rest of the dry ingredients to make a heavy batter which will be rather stiff.
Fold in beaten egg whites with spatula
Cover and let rise until double in size. (half to one hour)
Using two regular tablespoons (one for scooping and one for scraping) drop into hot oil (about 375F or 190C), turning over once and frying until brown.
Scoop into a paper towel lined pan and roll in sugar while still warm.
