| This may come under the heading of pasta sauce, but my family has always stewed tomatoes. We peel a buch of em, dice em, put em in a Dutch oven, add some diced celery, green peppers, and whatever other veggies might be to your liking, then boil them for about 10 mins. After they cool we put them in Ziploc freezer bags and into the freezer they go. It adds a nice summery flavor to dishes like Spanish rice, chili and spaghetti all through the winter. As for corn on the cob, I have a friend who blanches it, and he claims it tastes as good the following January as it did the previous summer. | |

| Has anyone ever made "sun pickles"? I usually do a couple of batches every year. They're the best pickles I ever tasted. (aside to Savannah: They do not - repeat not - taste like kerosene cucumbers. ) | |

| what we do at my house is we cut ofall of the spare leafs off of the corn put them in a pan and stick them in the oven for 30min it tastes sooo good! put ur toematoes in a salad | |

| For the Corn Cut the Corn off the ears 20 Cups of Corn 1 Cup of Butter Bake 30 min add the Butter Bake another 30 min Let it Cool a Little Put it in Zipper Bags Freeze them if you need corn like for Turkey or Ham or Something get it put it in the Microwave and It taste much better then those Cans | |

| SUN PICKLES
Ingredients:
pickling cukes (enough to fill a gallon jar) 4 cups water 2 cups white vinegar 8 heads of dill (or more if desired) 6 cloves of garlic 1/2 cup of kosher salt (or less if desired) 1/2 teaspoon of alum
Directions:
Put garlic cloves in gallon jar, then fill with cucumbers, adding heads of dill so that they're spread randomly among the cukes.
Combine water, vinegar, kosher salt and alum; mix until ingredients are thoroughly dissolved. Pour mixture into jar. If it isn't quite filled all the way, top off with water.
Put the jar in a sunny location and let it set for three days, after which the pickles are ready to eat. They refrigerate well and will keep all summer. | |

| This recipe calls for pickling cukes, but if you only have full-size ones, you can slice them into smaller pieces and use those instead. | |
