| Apple Pie in a Jar4 and a half cups sugar2 tsp. cinnamon1 tsp. salt3 Tbls. lemon juice1 cup cornstarch1/2 tsp. nutmeg10 cups waterPeeled and sliced apples, to fill seven quart jars.Peel and slice apples. Mix all ingredients EXCEPT lemon juice and apples in a pan. Put on medium heat until bubbling and "syrupy". Add lemon juice. Fill hot clean quart jars with sliced apples, packing tightly. Pour hot syrup into jars, over apple slices. Put on lids and rings. Process in hot water bath for 25 minutes, or in pressure cooker for 10 minutes at 10 pounds pressure. You can use the same recipe for peaches, but omit the spices. Also for cherries, omitting spices, and adding 1 tsp. almond flavoring to syrup after removing from heat._____________________________________________________________Moist Pie Crust MixIngredients:5 lb Unbleached Flour3 lb (1 Can) Veg. Shortening1/4 c Unbleached Flour2 tb Salt3 c Cold WaterDirections: Combine flour and salt in a very large bowl. Mix well. With pastry blender cut in shortening until evenly distributed. Mixture will resemble cornmeal in texture. Add cold water all at once and mix lightly until the flour absorbs all the water and texture resembles putty. If dough is too sticky, sprinkle a little four over the top and mix until dough barely holds together in the bowl. Divide dough into 10 oblong rolls. Wrap each roll well with plastic wrap and aluminum foil. Freeze and label. Use within 12 months.____________________________________________________________~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Gingersnaps2 c. flour1/4 tsp. salt1 tsp. baking soda1/4 tsp. cloves1 tsp. cinnamon1 tsp. ginger3/4 C. shortening 1 C. brown sugar1 egg4 T. molassesCream shortening, brown sugar, egg and molasses. | In one of the games, I mentioned that I'd tried a couple of "new" recipes this week. This is one of them, but it really isn't a new recipe. It's over 100 years old. And it's out-of-this-world delicious!! I'm not usually crazy about Blueberry pie, but this is so good, I made another one tonight. (Anyone want to come over for pie? ) So, I thought I'd share the recipe with you. I won't share the other recipe that I tried because it was horrible, terrible, awful, no-good, bad and rotten. Oh, and did I mention that I didn't like it? BLUEBERRY CREAM PIE Ingredients:1 cup white sugar 2 egg yolks 1 tablespoon quick-cooking tapioca 1 pinch salt 1 tablespoon lemon juice 1/4 cup milk 1 quart fresh blueberries 2 egg whites 1 tablespoon all-purpose flour 1 tablespoon white sugar DIRECTIONS
- Preheat the oven to 425 degrees F (220 degrees C). Prepare pie pastry, and place into a 10 inch deep dish pie pan.
- In a large bowl, whip egg yolks with an electric mixer on high speed until pale. Gradually add 1 cup sugar while mixing. Mix until sugar has completely dissolved, and the yolks are thick and pale. This can take up to 15 minutes. Mix in the tapioca, salt and lemon juice. Stir in the milk, and then carefully fold in the blueberries. In a large glass or metal bowl, whip egg whites to stiff peaks. Fold egg whites into the blueberry mixture.
- Combine the remaining 1 tablespoon of sugar with the flour, and sprinkle into the bottom of the unbaked pie crust. This will absorb extra juice, and keep the pie from leaking. Pour the filling into the prepared crust.
- Bake for 10 minutes in the preheated oven, then reduce heat to 350 degrees F (175 degrees C). Bake for an additional 40 to 60 minutes, or until pie is set
A couple of notes. I don't add the lemon juice, because my family doesn't like the flavor of lemon very much. And, it only took the additional 40 minutes when I've made it both times - so don't shoot for the higher number.

| You would think so, wouldn't you? But, honestly, when I add the lemon to other pies, they can taste it. So, I stopped adding it. | |

| Aw, I like that Rhonda! I have a friend who's raising a mischievous puppy right now---she'll get a kick out of this! :haha: I'm going to have to try those South Beach cookies! They sound yummy! (BTW, I have baked with the Splenda sugar substitute before...it's pretty good! It's not 'the same', but not bad either!). “Not all of us can do great things. | This is a fabulous recipe that was just given to me lately: PEANUT BUTTER PIE
You will need: 1 8oz package cream cheese 1 1/2 cups confectioners sugar 1 cup peanut butter 1 cup Milk 1 16 oz tub of whipped topping 2 9 inch prepared graham cracker pie crusts
Beat together the cream cheese and confectioners sugar, mix in peanut butter and milk, beat until smooth, fold in whipped topping. Spoon into two 9 inch graham cracker crust. Then cover the pie and freeze until firm.

| Savannah sent me this recipe the other day, and I made it this afternoon. It's the best pie I've ever eaten! It's as light as a feather, with such delicious peanut buttery flavor. I had two slices after dinner, and I never have seconds for dessert. But this was just that good! I only had one pie crust, so I used one-half of the ingredients listed. It came out just right. (Well, there was some filling left over, but I didn't mind spooning it out of the mixing bowl and eating it as sort of a pre-pie test run. ) Thanks, Savannah! | |

When I worked at Bill Knapps when I was 21, I used to have a piece of their peanut butter pie at LEAST three times a week. This was back in that day I could eat practically anything I wanted and not gain an ounce. Ahem, those days are over. Anyway, they had the BEST, and I've always hesitated to make one because of my high standards, but I might just give this one a shot! “Not all of us can do great things. | I took a big slice of Savannah's pie over to my 92-year-old neighbor yesterday. She loves food, but isn't a real big eater, so I figured this piece would last her for at least two desserts. Wrong! She polished the whole thing off in one sitting! Now she's insisting I give her the recipe so she can take it down to her daughter's house for Thanksgiving. | |

| I've made apple pie for the past 3 years in a row for Thanksgiving. I kid you not, this Martha Stewart Old Fashioned Pie recipe is the BEST anyone in my family has ever had...they all expect me to make HER pie now! LOL! http://www.marthastewart.com/recipe/favorite-old-fashioned-apple-pie?autonomy_kw=apple%20pie&rsc=header_7I am NOT the best baker, but I am telling you, my pies actually end up looking like the one in the picture. I will try to post a picture of mine soon! You need to make the "Pate Brisee" recipe that's linked onto the recipe though---that crust is to die for!! “Not all of us can do great things. But we can do small things with great love.”
