| I've been meaning to post this for days and days, and I keep forgetting! This is one of the best pies I've ever tasted!! *swoon*
It's super-easy to make, and tastes amAzing!
Peanut Butter-Chocolate Banana Cream Pie What You Need 35 NILLA Wafers, finely crushed (about 1 cup) 1/4cup butter, melted 2 squares BAKER'S Semi-Sweet Chocolate, divided 1/2 cup Creamy Peanut Butter 2 bananas, cut lengthwise in half, then crosswise into quarters 2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding 2 cups cold milk 2 cups thawed COOL WHIP Whipped Topping, divided 2 Tbsp. Salted Peanuts, coarsely chopped
Make ItHEAT oven to 350ºF. MIX wafer crumbs and butter until well blended; press onto bottom and up side of 9-inch pie plate. Bake 5 to 8 min. or until golden brown. Cool completely. Meanwhile, make chocolate curls from 1/2 chocolate square. Refrigerate. MICROWAVE remaining 1-1/2 chocolate squares and peanut butter in microwaveable bowl on HIGH 1 min.; stir until chocolate is completely melted and mixture is well blended. Place bananas in crust; drizzle with melted chocolate. BEAT pudding mixes and milk in large bowl with whisk 2 min. Stir in 1 cup COOL WHIP. Spread over bananas; top with remaining COOL WHIP. REFRIGERATE 3 hours. Top with chocolate curls and nuts just before serving. Notes: I used a store-bought graham cracker crust rather than making a Nilla wafer crust, and it was still fabulous! I also didn't add any peanuts, but I did use just a bit more chocolate than the recipe called for.

| I can verify that this is one of the best pies ever! Lisa gave me the recipe a couple weeks ago, and I've already made it twice. Ha! I was all set to have the last piece for dessert last night, and I dropped it in the sink, which was full of water at the time. | |

| That looks amazing! You know, I just saw a Dr. Oz thing on good 'night time snacks, and bananas with peanut butter was one of them. I don't know why, but it's never occured to me to combine bananas with peanut butter. I've heard of bananas and chocolate, but not peanut butter. Hmm, I wonder if Dr. Oz would approve this pie as an acceptable night time snack.

| Frozen Reese’s Peanut Butter Pie Makes one 9 inch pie or three 4 inch mini pies. Preparation: Lightly butter springform pan if it is not non-stick. If you do not have a springform pan line a cake pan with a piece of lightly buttered foil leaving a one inch over hang around the edges for easy pie removal or alternately use a traditional pie pan. Ingredients: •24 oreo cookies, crushed •4 tablespoon unsalted butter, melted •2 ½ cups Cool Whip •¾ cup creamy peanut butter •½ cup confectioner sugar •½ cup crushed Reeses Peanut Butter Cups Instructions: Oreo Crust: 1.Place Oreos in a food processor or blender and pulse until cookies are finely crumbed. Alternatively, place Oreos in a plastic bag and crush with a rolling pin. Mix in the melted butter and then firmly press crumbs into pan to create a crust. Bake crust at 350 degrees F for 7-10 minutes. Reese Peanut Butter Pie Filling: 1.Place peanut butter and confectioner sugar in a pan over low heat and stir until combined and peanut butter is melted. Set aside for five minutes to cool. Gently fold in peanut butter mixture into Cool Whip until combined. Gently fold in crushed Reese’s pieces into peanut butter Cool Whip mixture. 2.Pour mixture into Oreo crust and freeze for 3 hours. | HUMMINGBIRD CAKE
Serves:12 -16 servings ·Prep/assembly time: 45 minutes ·Baking time:25-30 minutes ·Cooling time: 15 mintues
Ingredients (cake):
·3 cups flour (gluten free or regular) ·2 teaspoons ground cinnamon ·1 teaspoon baking soda ·1 teaspoon salt ·1 cup granulated sugar ·1 cup packed light brown sugar ·3 large eggs, room temperature ·1 cup vegetable oil ·2 teaspoonsvanilla extract ·1 cup fresh pineapple, crushed (see below) ·2 cups roasted bananas*, mashed (approximately 4 large or 6 medium-small bananas with peel left on) ·1 cup chopped pecans
·Parchment paper to line bottom of the cake pan
Cream Cheese Frosting:
·1 ½ sticks unsalted butter, chilled ·3-8 ounce packages of cream cheese, chilled ·1 teaspoon vanilla ·1 ½ cups powdered sugar, sifted ·1 ½ cups finely chopped pecans
1. Preheat the oven to 350 degrees.
2. *Place bananas on a cookie sheet with peels left on.Bake in the oven for 12 minutes until the skins are black (the bananas may leak which is fine).Remove and let cool until they can be handled.Peel bananas, place in a small mixing bowl and mash.Set aside.Leave the oven heated to 350 degrees.
3.Butter and flour 3-9 inch round baking pans. Trace the bottom of the pan (for all three pans) onto parchment paper, cut out circle and place in the bottom of each pan.
4.In a sifter over a large mixing bowl combine the flour, cinnamon, baking soda and salt.Sift into the bowl.Set aside.
5.In a second large mixing bowl combine the granulated and brown sugar; stir to combine.Add the eggs and stir briskly by hand to combine all ingredients into a smooth mixture.
6.Whisk the oil and vanilla into the sugar/egg mixture until combined and smooth.
7.Add the flour mixture all at once and hand stir (do not beat) to combine the mixture fully.
8.To crush the pineapple:Place 1 cup of finely diced fresh pineapple in a medium mixing bowl and using a potato masher, crush the pineapple.Add the fruit and juice to the batter.Also add the mashed banana and the pecans.Stir just until combined; do not over stir.
9.Divide the batter evenly between the three pans.Tap the pans on the countertop to release any air bubbles and place in the 350 degree oven for 25-30 minutes until cake bounces back to the touch and a toothpick inserted in the cake comes out clean.
10.Allow to cool in pans on racks for 5 minutes then turn out onto cooling racks to fully cool before frosting.Be sure to peel off and discard the parchment paper.CANCER FREE!!! April 9, 1998-April 9, 2025-I AM A SURVIVOR!!! | |
