I am left with no choice but to make one!! I am having a chocolate/peanut butter coniption fit! Does anyone remember "Bill Knapps"? Well, I used to waitress there in my early 20's, just part time, and after my evening shifts, I would have a salad for dinner and a piece of their peanut butter pie. Oh MY. Oh how I miss that place!!! And oh how I miss my 20's, when my metabolism would allow me to actually DO that and remain a skinny minny, LOL! | |

| Savannah sent me this recipe for peanut butter pie a few years ago. It's delicious! I don't think she'd mind me sending it along. When she first mentioned peanut butter pie, I imagined it being very thick and heavy. But it's actually as light as a feather. It's one of the best pies I've ever had. SAVANNAH’S PEANUT BUTTER PIE (Makes two pies) Ingredients: 1 8-ounce package of cream cheese 1 1/2 cups confectioners sugar 1 cup peanut butter 1 cup milk 1 16-oz. tub of whipped topping. 2 9-inch graham cracker pie crusts Directions: Beat together the cream cheese and confectioners sugar. Mix in peanut butter and milk. Beat until smooth. Fold in whipped topping. Spoon into the graham cracker crusts. Cover the pie and refrigerate until firm. | |

| I made one of these today. :-) I didn't cut the cake very well so it's kind of messy, but you get the idea. :-P After reading the recipe, it said to split the batter into two 6" pans. I thought that seemed really small (and I don't have 6" pans) so I made two batches and poured each batch into its own 8" pan (with 3" tall sides so I didn't have to worry if it grew too high). Unfortunately, as somebody who really likes chocolate and peanut butter, I have to say that I'm very disappointed with this recipe. Here's my review and suggestions: The Good- The cake is very moist. - It doesn't taste like beans at all. - It's easy to make this recipe (though somewhat messy). The Bad- The cake, though not tasting like beans, doesn't have much of a chocolate flavor either. Perhaps this would develop more after resting for a day, but after two hours I was rather disappointed that it doesn't taste very chocolaty, despite using Hershey special dark cocoa. - The frosting didn't have nearly enough powdered sugar. I didn't realize that until after I had frosted most of the cake. - The batter smells awful! I like to lick the batter off of the mixer's beaters and from the bowl when making box cake mixes. That wasn't a temptation with this batter! :-P The good news is that the awful smell is gone after the cake is baked. :) Recommendations- Use much more cocoa. If I were to make this again, I'd probably double the amount of cocoa. - Use at least three times as much powdered sugar to give it a frosting-like consistency instead of being so oily. I used Jif peanut butter instead of natural peanut butter (which was recommended in the recipe) because of the complaint in the recipe of the frosting being too oily. I made extra frosting so I had quite a bit left over and added lots more powdered sugar and ended up getting a good frosting...too bad it was after I had already frosted the cake with my oily frosting. :-s - I think that the ganache would have been better had I put a little powdered sugar in with it. That's just a personal preference and I think that the ganache works fine as in the recipe. - I used a food processor to blend the beans, eggs, and sugar, but I think that a blender would have done a better job. I thought that I had a blender, but couldn't find it so just used my food processor. Perhaps it's just that my cheap Walmart food processor isn't up to the job. :-P Even so, it was well blended and I wouldn't have known (by flavor or texture) that there are beans in the cake after it's baked. |
